Lamb Prosciutto


While we have some blowing lake affect snow outside we decided that perhaps it is time to do the next weighing of the Lamb Prosciutto. The goal was 30% weight loss after hanging it to dry, WE MADE IT! Only 26 days of hanging to dry.


Let me tell you, this is good, it is really good. The biggest problem we will have with this is not eating too much at a time. There's so many things that this will pair well with. When herding the sheep in the spring we will be looking at those legs of lamb in a completely different way.
