We sold "Beanie" our first lamb, at 8.5 months old, he was 135 lb. live weight. We dropped him off at Cobbleskill Meat Lab and Joe (that purchased him) processed the carcass himself and was nice enough to share pictures and information on what he got out of the carcass. Just imagine all the wonderful dishes that you can cook.
